Here you go SKD, this is my take on a Shrimp Banh Mi

Recipe # 3 SKD_MRK on your plates Shrimp Banh Mi

Ingredients
> 1 pound of 31 -35 shrimp, this means 31 to 35 in a pound
> 1 seedless cucumber
> 2 whole carrots
> 1 red pepper
> 1 cup rice "WINE" vinager, maake sure to get rice wine over plain rice
> 6 sub / hoaggie buns
> 2 cups mayo
> 1 tsp salt, pepper, 1/2 tsp pepper flake, 1tbs lime juice

Prep
> make sure your shrimp are peeled, deveined and tails off
> pat the shrimp dry, and season with some salt and pepper
> let sit

>Take the mayo, the measured spices and the lime juice and mix together

> slice your carrots, cucmber, and red pepper as this as possible. if you have a slicer now would be the time to use it. the thiner you get the veg, the better the sandwich comes out.
> soak the veg in the vinager for at least one half hour

> sautee the shrimp in smolking hot pan, this will only take 45 seconds on each side. make sure the shrimp were dry before you put them in the pan, they will sear better and keep hot oil from splashing you.

> drain the veg

> spread mayo on bun, place on veg, add shrimp, enjoy :)

47 lazy shrimp:

buy peeled frozen shrimp, pan fry that shit. 1 min from ready, add soy sauce. dont overcook shrimp, or it will shrink too much. enjoy big bowl of shrimp with beer.

have not made much interesting lately (its getting into winter so just making lost of stock/soups ).
but
Cornbread pancake open face (not exact on measurements)
1 cups flour
1 cup cornmeal
2T sugar
1 1/2 tsp baking soda
1 tsp salt
1 jalapeno minced (thai peppers or just some cayenne pepper if you are not big on spice.)
1 egg
1 1/4 cup milk
2T oil

now make pancakes (you can also make them small and use them as great apps with just some avocado.)
toppings.
anything works - beans, pulled pork, chile, sliced roasted beef, meatballs, u name it can goes on (its just a open face sandwich). melt some cheese on top and you are done.

a soup i love-
roasted eggplant soup that i have not done this winter yet.
roast (salt oilve oil) oven @ 400 - 45min
1 eggplant
3 tomatoes halved.
1 garlic bulb (wrap in aluminium foil/oil)
1 white onions

place into pot with with 4 cups stock and thyme
simmer 45min
bend together with hand blender and then add 1/4 cup heavy cream
salt pepper and done.

my white castle burgers
Ground beef
white onion
Garlic
pickles
olive oil

cayenne pepper 1/2 tsp per burger
salt
pepper

Empty Tuna Cans (remove paper/glue)
Buns / bread

any other topping needed.
--------------------------------------------------------
dice enough onion, garlic to cover the bottom of the Tuna cans. slice pickles
coat bottom off can with Oil, place cans on burner med heat
once hot place onion/garlic in, saute onions
mix cayenne pepper, olive Oil, Salt, and pepper, to ground beef and roll into small balls that will fit into the cans.

place a little extra water in the can to help steam. (you can just use oil and that works too)
Place pickles then beef into cans and press down. take a fork and poke holes thought the beef
Place bread on top of beef wile still cooking to gather all the juice.
Cook till done.

I have also tried dicing the pickles with the onions and garlic and that worked as well.

thought of one thing that might work for you.
I am just going to post a link to a similar rice i use
http://jewelmaker.livejournal.com/31473.html

there is a tone of ways to present this type of dish (when i have done it in the past i make it look like sashimi/sushi rolls but thats more work than needed). and bc its a light desert "your" girls might like it.

a (maybe rice) coconut milk ice cream might also be nice. ??

anyone else cook their shit up in the microwave?????

just one example of something that turns out just fine when u nuke it
http://allrecipes.com/Recipe/microwave-baked-potato/detail.aspx

1 large russet potato
1 tablespoon butter or margarine
3 tablespoons shredded Cheddar cheese
salt and pepper to taste
3 teaspoons sour cream

Directions

Scrub the potato, and prick several time with the tines of a fork. Place on a plate.
Cook on full power in the microwave for 5 minutes. Turn over, and continue to cook for 5 more minutes. When the potato is soft, remove from the microwave, and cut in half lengthwise. Season with salt and pepper, and mash up the inside a little using a fork. Top the open sides with butter and 2 tablespoons of cheese. Return to the microwave, and cook for about 1 minute to melt the cheese.
Top with remaining cheese and sour cream, and serve.

Another one, you can throw in maybe 0.25 g of ground up cronic in there too if you wish to kick it up a notch
