I think in sticking with that CPU you and Cock both linked, I'm fairly happy with keeping my Mobo the same.
P.S. there is literally almost no point upgrading cooling if you're not overclocking. You components at stock settings shouldnt be overheating or preformance shouldnt be suffering.

Phenom II X6 is a beast at video encoding but they were all discontinued at the end of last year and got rare here pretty fast so I'd be wary of random online shops claiming to have them in stock. Either way an AM3+ board is the way to go, it's backwards compatible with Phenom II chips, provides the latest gear (eg. SATA III & USB 3.0) and has a way better selection in the sub-$150 range than Intel mobos.
Yeah I'm thinking that I will just stick with the mobo I have now and go for the CPU that Cock and DyNe both posted.
If I'm ever desperately in need of a new mobo I will definitely upgrade to AM3+ just cause I can.
But for now the one I use it perfectly fine.
The good news is ATI cards are pulling ahead of nVidia offerings lately so an AMD board with CrossFire support will work out nicely. Having said that, my AM3+ board has two nVidia cards and it works great with those too despite lacking SLi support.
One GPU is fine for me right now
Modular PSU is definitely worth it IMHO because you don't need to have unused cables taking up space in your case and blocking airflow (bugs the shit out of me, at least).
